I recently found out that one of the easiest ways to preserve the environment is to eat more organic fruits and vegetables.  Eating primary foods like fruits and vegetables uses several times less land area and water than producing meat (grain used to feed cattle, etc.)  Imagine all the land area that could be left for wildlife if we didn't use half of the land to produce meat.  This can also help save the rainforest where it is cut down for agriculture.
For more information on saving the Earth by changing your diet, I recommend The Food Revolution by John Robbins.
